Happy Autumn :)

As anyone who knows me would know, I LOVE FALL! So to celebrate the (I think) second day of fall today, I decided to make butternut squash soup. Soup is so delicious and usually pretty healthy! I forgot to take pictures of the beginning of the process, aka me cutting up the onions and the squash, but at least I got a pic of the halfway point and of the final product. Here they are.. and forgive me as they were taken by my camera phone.




So I just finished eating that bowl of soup shown above and I know you're quite jealous, but don't worry. I'm about to share the recipe with you.

1 large butternut squash, diced into 1 inch squares
1 1/2 large yellow onion, chopped
2 apples peeled and cut into chunks
2 tablespoons olive oil
2 cups chicken stock
1 cup apple cider
1 cup water
Nutmeg, cinnamon, and curry powder
Salt and pepper

Cut squash into 1-inch chunks. Cut and peel apples. Slice onion. Add olive oil to a large pot. Add onion and cook until translucent, about 6 minutes. Add squash, apples, stock, cider, and water. Bring to a simmer and cook until squash is tender, about 30 minutes. Remove squash chunks with slotted spoon and place in a blender and puree. Return blended squash to pot. Stir and season to taste with a little nutmeg, some cinnamon, curry powder, and salt and pepper. Serve.

EASY RIGHT? And so delicious. And healthy. I'm telling you. I'm going to get seconds right now.
